Here, Pacquelin has embarked on what he calls a new-school approach to French cuisine. Classic French dishes are served in a new calorie-free. Tete de veau, for example, is a traditional dish that features whole calf's head, which can be unappetising to diners. At Clos Pasoh, Pacquelin presents the dish every bit crispy fried dumplings, served alongside fresh wasabi instead of the usual ravigote sauce.
